Legend has it that this drink was named for a waiter named John Collins, who worked at a London restaurant called Limmer’s. It was first recorded in cocktail books in the late nineteenth century, and some early recipes called for whiskey rather than gin.

Method

Combine the genever, lemon juice, and simple syrup in a shaker. Add ice, shake hard for 8–10 seconds, and strain into a collins glass filled with ice.
