A category of cocktail popular around the late 1800s, the Daisy was simply a sour cocktail with the addition of a small amount of seltzer water. Not to be confused with a fizz, which features three to four times the amount of soda water, the daisy has just enough seltzer to let the drink bloom.
Combine the Cognac, lemon juice, orange liqueur, and gum syrup in a shaker. Add ice, shake hard for 8–10 seconds, and strain into a chilled coupe or cocktail glass. Top with the seltzer.
