Method

Combine the gin, lemon juice, simple syrup, bitters, and 1 zest strip in a shaker. Add ice, shake hard for 8–10 seconds, and strain into a chilled champagne flute or coupe. Top with the sparkling wine. Express the remaining zest strip over the drink and drop it into the glass.
