The two alcoholic beverages Lord Grantham loves the most are port and whisky, and this drink–fizzy and sweet with some nice acidity–manages to embrace both. It’s a riff on the Upstairs Cocktail, with the whisky contributing heather, smoke, and turf, for contrast and depth.
Combine the lemon juice and port in a collins glass with ice, then top off with the seltzer. Stir to mix. Float the whisky on top (see note). Express the zest over the drink and drop it into the glass.
