A modern, easy take on ginger beer, this recipe requires minimal work and creates a flavorful drink—the perfect replacement for ginger ale. To spike a batch of ginger beer to serve bucks to your friends, add 2½ cups (600 ml) of your favorite spirit to the pitcher and stir well.
To make the ginger syrup, put the ginger into a fine-mesh sieve set over a small jam or Mason jar. Using a small rubber spatula or your hand, press against the solids to extract as much liquid as possible. Cover and refrigerate the juice. Reserve the ginger solids.
