Boil the rice according to preceding recipe, using one cup to one quart of boiling water. Boil rapidly for fifteen minutes. Pour off any water that remains on top. Set in the oven to dry for about ten minutes. Then drain. Season with salt and pepper, and press into a well-buttered border mold. Put it in the oven and let it bake ten minutes. Take out. Place a dish on the mold. Turn it upside down, and remove the mold. The hollow space in the center can be filled with a White or Brown Fricassee of Chicken or Curry of Crawfish.
