Method

Put the butter into a saucepan and as it melts add the flour, but do not let it brown. Add the cup of boiling milk and stir well. When it begins to thicken, add the grated cheese, and let it simmer for a few minutes longer; then take from the fire and add the beaten yolks of four eggs. Have the Macaroni cut into tiny bits and work it well into this mixture. Then set it aside to cool. When cold,
