Put the milk on to boil, and add the bread, which you will have minced fine. Stir the milk and bread until very smooth, and then add the butter, stirring well, and finally the grated Cheese. Stir this for five minutes, letting it boil, and then take off the fire and add the beaten yolks of three eggs. Have the whites ready, beaten to a stiff froth, and stir them in very gently. Season to taste.
