  • 6 Potatoes
  • Salt to Taste

Method

Boil the potatoes with their jackets on. Then peel them and set them before the fire, to allow all the water to evaporate. Sprinkle lightly with salt. Then rub them through a sieve or colander. Let the Potato fall in light, flaky drops, like snow flakes. Do not touch the flakes as they fall. Serve on the dish in which the flakes have fallen. This dish is very delicate.
