Method

Continue boiling till the sugar reaches a light brown color. Then take the vessel off immediately, or it will burn. Any degree beyond this renders the sugar calcined and barely fit for making coloring for cooking purposes. On taking the vessel from the fire, insert the bottom in cold water to prevent the sugar from burning.
