There are of course, in different countries, many variations on the theme of fish croquettes, and I dare say many of them originated as this one did, by chance. I found one day that, for some reason, I had a lot of leftover sushi with raw cod. It is simply not done in Japan to serve yesterday’s sushi, and as an Indonesian I can never bring myself to throw away rice. So I made these croquettes, which are just as good, in a different way, as those made from leftover risotto.

As you may not have any leftover sushi, the recipe below starts with the uncooked rice. You can use any locally obtainable white fish instead of the cod.
