I am always on the lookout for good savoury dishes that use rice flour. Kibbeh is a delicious mixture of minced lamb with either rice flour or bulgur, formed into small balls or croquettes and then baked or deep-fried. I have adapted this recipe from Claudia Roden’s New Book of Middle Eastern Food, with the author’s permission.
The fried kibbeh, by themselves, make good finger-food or canapés with drinks.
