  • 2 tbsp sesame or peanut oil
  • 1 onion, finely chopped

Method

Heat the sesame or peanut oil in a wok or frying pan and stir-fry the onion for 2 minutes, then add the ground coriander, salt and lentils. Stir-fry these for 2 minutes, then add the water. Simmer, stirring often, for 5 minutes or until the lentils have absorbed all the water. Leave to cool.

When cool, add the rest of the ingredients. Mix well, and adjust the seasoning. Heat the oil in
