Heat the sesame or peanut oil in a wok or frying pan and stir-fry the onion for 2 minutes, then add the ground coriander, salt and lentils. Stir-fry these for 2 minutes, then add the water. Simmer, stirring often, for 5 minutes or until the lentils have absorbed all the water. Leave to cool.
