You may think at first this looks a little contrived. In fact, it is the easiest way to present sushi rice with raw fish. As it is done Western-style, it should be eaten with knife and fork, not chopsticks. I suggest serving slices of the terrine on mixed salad leaves, dressed with mayonnaise or a vinaigrette.
