This is a combination of two recipes: bacalhau a bras (salt cod cooked with potatoes and egg) and arroz de bacalhau (rice with salt cod). All Indonesians are familiar with salted fish, because until very recently this has been the only way to preserve fish on their journey from where they are caught to where they are cooked; even today it is usually more practical to salt fish in bulk than to freeze them.
