This is one of many East-meets-West one-dish meals that are good for a family dinner or as part of a large buffet. In many countries, of course, goats are more commonly kept than sheep, so throughout this book you should read ‘goat’ for ‘lamb’ when appropriate. And in this recipe, you can use goat’s milk instead of milk from cows or coconuts.

If you are serving this as a one-dish meal, or a main course more or less complete in itself, you should allow 2 cutlets per person; as part of a buffet, 1 per person will be enough. You need a large baking dish that can accommodate all the cutlets in one layer.
