Plain cooked white rice is by far the best accompaniment to this gorgeous stew. I have always made rogan josh with brisket, but silverside or flank steak would be just as good. You can of course cook it equally well with lamb or goat; I have had several lamb and goat versions of this dish in India, not always called rogan josh but still recognizably the same dish.
