Many of the ingredients in this hamburger are Japanese. However, if you prefer something spicier, by all means use the Javanese ingredients that are listed in the Tempeh Hamburger Steak. The method is the same for both. The best tofu to use is the firm, fresh Chinese kind, which you buy from a Chinese shop, or the so-called ‘original tofu’ that is now sold in large supermarkets and health food shops.
