In 1986 the Culture and Tourist Association of Konya, in Turkey, organized the first of a biennial series of international congresses on food and cookery. It was a great occasion, and hospitality was lavish. Among many delicious things that I tasted there for the first time was this remarkable dessert. You may not expect to find chicken in a sweet dish; I certainly did not, and was duly astonished when I was told about it. But it tastes extremely good.

The version I give here is a c
