You can use either cow’s milk or coconut milk for this pudding. The best nuts are pistachios; otherwise, use almonds, walnuts, or (in Indonesia) kenari nuts. Whatever kind you use, they need to be blanched or roasted so that the thin skin can easily be removed. The fruit should be either apricots and peaches, or mango and jackfruit. Ideally, the rice should be freshly ground in a food processor, but rice flour from a packet will do.
