In a book about rice, there are bound to be quite a few Japanese recipes, so I include this basic Japanese stock. This is the authentic dashi, which is easily made at home. Most Japanese cookbooks will tell you that there is now a widely available instant dashi. They may also tell you that this product contains more monosodium glutamate (MSG) than nature intended; so, for me, it’s back to the kitchen.
