Like sambal ulek, harissa can be bought in jars or cans from good delicatessens. I personally find the canned sort much too sour. In Good Food from Morocco, Paula Wolfert suggests sambal ulek as an alternative to harissa. They are in fact very similar chilli sauces, variations on each other.

Ingredients

  • ½–1 teaspoon cumin seed
  • 1 tablespoon olive oil
  • 1 tablespoon
