Make Potato Croquette mixture, adding, if desired,
Roll in flour, egg, and crumbs, fry (golden brown) in deep hot fat, drain and serve hot. For pear and apple shaped croquettes, stick a clove at both stem and blossom ends. Maybe prepared beforehand and reheated in the oven in shallow buttered pan. If sweet potatoes are used, add syrup in Glazed Sweet Potatoes.
