Ingredients

  • 2 cups sweetbreads, cut in dice
  • 2 cups celery, diced
  • 1 cup cooked or canned peas, drained
  • 1 cup Mayonnaise

Method

Follow recipe for boiling sweetbreads. Have all the ingredients very cold, and just before serving mix with the Mayonnaise, and place on crisp lettuce leaves. May also be served in tomato or green peppers, scooped out.
