Ingredients

  • 1 rounded cup stale bread crumbs
  • 1 cup suet, chopped fine
  • ½ cup sugar
  • 1 cup molasses
  • 3 eggs
  • ¼ cup flour
  • lb. seedless raisins
  • 2 oz. citron, cut fine
  • ½ cup chopped almonds
  • 2 cups sour apples, chopped, fine
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground allspice
  • ½ teaspoon ground doves
  • 1 teaspoon salt
  • 1 cup brandy
  • Rind of a lemon

Method

Soak raisins, citron, almonds and apples in the brandy over night; then add the rest of the ingredients. Turn into a buttered mould and cover or place in a well floured bag and steam from 4 to 8 hours, the longer the better. Good warmed over Serve with Brandy Sauce.
