  • 10 yolks of eggs
  • 7 whites of eggs
  • 1 cup powdered sugar
  • 6 oz. almonds, grated
  • A little cinnamon
  • A little citron, cut fine
  • Rind of 1 lemon
  • Juice of ½ lemon
  • 1 teaspoon baking powder


Stir yolks with sugar until light, add some of the grated almonds, lemon juice and rind; then citron, mixed with the rest of the grated almonds and lastly the beaten whites.

Bake in spring forms or in layers and put Whipped Cream, or a Custard Filling, with grated almonds between. Slow oven.
