Violets are so subtly scented that you need the palest, mildest vinegar you can find. I like to use coconut vinegar, which you will find where Filipino foods are sold, or a mild Japanese rice vinegar. Some supermarket white wine vinegars will also serve, as they can be very bland. Cider vinegar, however, is too dark and has too distinctive in flavour.
