Deep-fried sage leaves have long been a favourite garnish, and even a cocktail snack. You can do the same thing with edible flowers, using either a fritter batter or the crisper, lighter tempura batter, which, in my view is preferable. Suitable flowers include nasturtiums, squash blossoms, day lilies, marigold fans, rose buds, sage flowers, mimosa and elderflowers.
