Beat all the ingredients together in bowl for a smooth, lump-free batter. When your frying oil has almost reached the correct temperature, 188°C/370°F, dip your chosen flower in the batter and allow any drips to fall back into the bowl. Drop the flower into the oil and remove after a minute or so, when the fritter will be a pale gold. Dr
