Elderflower cordial makes a very refreshing drink when mixed with sparkling mineral water, a fine cocktail when combined with gin and sparkling water, and also an excellent flavouring for custards and ice-creams. I try to make several bottles every year, hoping that they will last until the next season.

Ingredients

  • 1 kg/2 lb granulated sugar
  • 1 litre/2

Method

Put the sugar and water in a saucepan, dissolve the sugar and bring to the boil. Shake the flower heads thoroughly and remove the stalks. Drop the elderflowers into the water and return to the boil. Meanwhile, put the sliced citrus fruit in a bowl or large jug with the tartaric acid, take the syrup and elderflowers off the heat and pour them over the citrus fruit. Stir well, cover loosely and l
