This is one of the best and easiest sorbets you can make, the dense, syrupy quality of the pears creating just the right texture. The mixture does not need stirring, you do not need to add egg white and you can make it just before it is required. The secret lies in keeping a supply of ripe pears in the freezer, peeled and quartered ready for use.
