The early white peaches usually arrive from Spain just as the first elders are coming into blossom. This jam is an extravagance unless there happens to be a glut of white peaches, even though I stretch it by using a good old Bramley, which has excellent setting qualities.

Ingredients

  • 1 kg/2 lb white peaches
  • 1 large Bramley apple

Method
