The addition of a couple of sprigs of elderflowers gives an ambrosial flavour to one of the most appealing of all traditional English puddings.

Ingredients

For the Filling

  • 1 kg/2 lb gooseberries, topped and tailed
  • 2 large elderflower heads

Method

Simmer the gooseberries with the elderflowers in 2-3 tablespoons of water for 10 to 15 minutes. Remove the flowers, sweeten the fruit to taste and transfer it to a buttered baking dish or individual ramekins.
