This recipe has the advantage that you can make it even if you don’t have elderflowers to hand, as the gooseberries can be flavoured and sweetened either with fresh flower heads and sugar or with elderflower cordial.


  • 1 kg/2 lb gooseberries
  • 6 elderflower heads and caster sugar to tas


Rinse the gooseberries (there is no need to top and tail them, as they will be sieved), then cook them gently until soft with the elderflowers, if these are in season; remove the flowers and sieve the gooseberries. Sweeten to taste, or add elderflower cordial if elderflowers are unavailable. Allow to cool and then fold in whipped cream or custard and chill until required.
