Elderflower fritters are a traditional dessert, but they also make an elegant accompaniment to a savoury dish such as griddled scallops, chicken breast or salmon fillet. If you are entertaining, however, it is much easier to serve them as a first course rather than later in the meal. Try the fritters plain, or with the addition of some finely chopped tart apple, a combination that goes especially well with fish.
