Miss Hartley also comments on the attractiveness of borage flowers as a garnish in a salad together with scarlet nasturtium flowers, so, thinking about the ingredients that go well with cucumber, I decided to use borage flowers in a shellfish and potato salad. Using sweet cold water prawns that are already peeled, this makes a quick and easy first course. Jersey Royals, Charlottes or La Ratte are the tubers of choice for a potato salad.
