This is based on a dish we used to enjoy in Italy when staying with friends who had a large and varied organic garden.

Hyssop is one of the few herbs that cannot be bought easily and it is well worth growing. Its fragrance and slight bitterness are perfect with tomatoes, and here it combines with the subtle scents of borage and angelica. If angelica is not available, chervil can serve as a substitute. The tomato in this recipe should be subtle and light, so use peeled and diced fres
