Dhukka is a fabulous Egyptian condiment, combining ground toasted hazelnuts, sesame seeds, coriander and cumin seeds, thyme, salt and pepper. I have made two versions using lavender, in one replacing the thyme with lavender flowers, which can be used as a savoury crust for fish fillets.
In the second version I replace the thyme with lavender and the salt with Demerara or golden granulated sugar and use the mixture in crumble toppings for fruit, as well as sprinkled on an iced
