Dhukka is a fabulous Egyptian condiment, combining ground toasted hazelnuts, sesame seeds, coriander and cumin seeds, thyme, salt and pepper. I have made two versions using lavender, in one replacing the thyme with lavender flowers, which can be used as a savoury crust for fish fillets.
