Flower jellies are one of the tastiest of all tea-time treats, and they also make good presents. I don’t advocate keeping them for longer than a year, but I am always surprised at how long the flower fragrance lasts. I once served some that was over two years old and, although the colour had deepened, the flavour was still fresh. See the note about which apples to use when making jelly.
