Apricots, cherries, blueberries and plums are the fruits that respond best to a breath of lavender fragrance. This fruit fool is summer encapsulated, but you can also make it in winter by soaking dried apricots and using lavender sugar – a cold, dull day will miraculously become much brighter.

Ingredients

  • 750 g/Β½ lb apricots, stones removed
  • 2 teaspoons l

Method

Rinse the apricots and place them in a saucepan with the honey and 2 sprigs of lavender. Put the lid on the pan and simmer on a very gentle heat until the apricots are soft, then rub the pulp through a sieve and allow to cool for 20 minutes or so. Fold the mixture into the yoghurt or custard, sweeten
