Ingredients

  • 1 or 2 teaspoons fresh lavender flowers
  • 150 ml/5 fl oz mild and fruity olive oil

Method

Put the lavender flowers in a bowl, bring the oil to the boil, pour it over the lavender and leave to infuse for a day or even two.

Line six ramekins with cling film. Put the goat’s cheese in a bowl, season it lightly and then mix it with a fork until you have a homogeneous mass. Spoon half the cheese into the ramekins to a depth of about 1 <
