As long as they are not too sweet, muffins of all kinds are good for breakfast, not least because they are quick and easy to make.

Ingredients

  • 175 g/6 oz plain flour
  • 1 tablespoon baking powder

Method

Mix the dry ingredients, including the petals, then stir in the wet ingredients until just combined. The mixture should remain somewhat lumpy and not be over-mixed. Spoon into double paper cases set on a baking sheet and bake in an oven pre-heated to 180°C/350°F/gas mark 4 for 15 to 20 minutes, until well-rise
