This is another excellent recipe that combines the two flowers, both of which have an affinity with cheese. These sausages make a perfect starter that appeals to vegetarians and meat-eaters alike, and you can also make miniature versions to serve as cocktail snacks.

Ingredients

  • 250 g/8 oz fresh breadcrumbs
  • 250 g/8

Method

Leeks are a traditional ingredient, but if they are unavailable you can substitute spring onions with no loss of taste. The flowers are not a traditional ingredient, but nevertheless just right.

Mix together the crumbs, cheese, leek or spring onion, flowers and seasoning. Stir one whole egg and the yolk of a second egg into the mixture, with as much milk as is needed to bind it together
