As well as providing the perfect complement to orange flower macaroons, this also makes an excellent filling for sponge cakes.

Ingredients

  • 200 ml/7 fl oz double cream
  • 1 tablespoon finely pared orange zest

Method

Whisk all the ingredients together until just firm enough to use as a filling.
