Filled with pistachio, ground almonds and orange custard, these crêpes make a rich dessert for a special occasion, perhaps after Moroccan salads and a lamb tagine?

Ingredients

Crêpes

  • 2 eggs
  • 125 g/5 oz sifted plain flour

Method

Beat together the ingredients for the crêpes until you have a smooth batter. Make the crêpes in the usual way. These can be made several hours in advance, or indeed can be frozen until required.

Mix the ingredients for the filling (I have made this with ‘bought’ custard before now, and was not struck down by the custard fairy) and spread it over the crêpes. Roll them and place in an ove
