Linden Flower and Lime Sorbet with White Chocolate Galettes

Although linden flowers make a heavenly tisane, on their own they are too delicately flavoured to form the basis for a sorbet. Anything frozen needs heightened flavour, which here is provided by the lime.

Ingredients

  • 1 lime
  • 2 tablespoons linden flowers
  • 200 ml/7

Method

Thinly peel the zest off the lime and put it in a jug with the linden flowers. Pour on the boiling water and leave to infuse for 10 minutes. Stir in the lime juice and sugar and, when this has dissolved, strain the infusion, cool and freeze in an ice-cream maker or freezer container.
