This recipe, with its exquisite combination of lemon, rosewater and anis, dates back to the seventeenth century, and it has the great advantage of being very easy to make. I once put it on the menu at the British Embassy in Cairo and was pleased that it seemed to be very much to the taste of the sophisticated Cairenes invited to the luncheon.
