This rich and delightful version of French toast, or the Spanish torrijas, is a perfect quick pudding. I used cider to make it when I was in the West Country, but you can substitute dessert wine or sherry as the mood takes you.

Ingredients

  • 150 ml/5 fl oz dry cider
  • 4

Method

Beat the egg and cider in a shallow basin and dip the saffron bread in it, making sure the bread is well coated on both sides. Fry in the butter until crisp and serve hot with a dollop of cold clotted cream and some honey.
