WHEN MY FAMILY ARRIVED IN AUSTRALIA, WE HAD VERY LITTLE. MY FIRST MEMORIES OF OUR FAMILY MEALS WERE OF STEAMED RICE AND PRESERVED BEAN CURD SERVED WITH CUCUMBER. WE COULDN’T AFFORD MEAT OR SEAFOOD, AND A SMALL JAR OF THIS BEAN CURD WENT A LONG WAY - IT FED THE WHOLE FAMILY FOR WEEKS. PRESERVED BEAN CURD HAS A BIG, BOLD FLAVOUR AND CAN BE USED FOR MARINADES, IN STIR-FRIES WITH GREEN VEGETABLES, OR USED TO MAKE A DIPPING SAUCE.
